Il y a plus d\u2019une histoire \u00e0 son origine. Certains disent que la vinaigrette porte le nom de sa couleur, mais la th\u00e9orie la plus populaire concernant ses origines serait au Palace Hotel de San Francisco en 1923, lorsque le chef ex\u00e9cutif de l’h\u00f4tel Philip Roemer voulait cr\u00e9er une recette pour rendre hommage \u00e0 l’acteur George Arliss et \u00e0 sa pi\u00e8ce \u00e0 succ\u00e8s, The Green Goddess.<\/p>

Il a alors concoct\u00e9 cette vinaigrette qui est devenue aussi populaire que la pi\u00e8ce de th\u00e9\u00e2tre. Celle-ci contenait des anchois, des oignons verts, du persil, de l’estragon, de la ciboulette, de la mayonnaise et du vinaigre.\u00a0 Il existe une variante originaire de France par un chef de Louis XIII qui faisait une sauce verte qui \u00e9tait traditionnellement servei avec l’anguille verte.<\/p>

En 1948, le New York Times a publi\u00e9 une recette de vinaigrette comprenant de la sauce Worcestershire.
